If you're hitting the Greenbelt this weekend or taking your kayak out for a spin at the new whitewater park, you might notice a brightly colored hut. It's the Yak Shack, a new business venture by two local women. The Yak Shack, at 31st and West Pleasanton Ave., serves drinks, snacks and Sugar Sugar ice cream sandwiches in flavor combos like:
- mint/chocolate
- guava-cheesecake/gingersnap
- salted-caramel/chocolate
- lemon-blueberry/meringue
We profiled the business earlier this month in Business Insider. But I happened to ride by last weekend, grabbed a Bahama Boise (coconut-mango ice cream/lime sugar cookie) and snapped a photo.
On certain days, The Yak Shack also serves a BBQ chicken meal.
The hut will be open through October.
By the way, the Boise River Recreation Park's grand opening is slated for the evening of June 28.
