TableRock Brewpub + Dawson Taylor Coffee = “Stimulator Stout”

Long time Boise imbibers know that TableRock Brewpub produces some mighty fine beer and Dawson Taylor Coffee Roasters brew a killer cup of joe.

In the “this idea makes so much sense why haven’t we tried this before?” department — both Boise beverage stalwarts have partnered to make to make a coffee-infused beer, the Stimulator Stout.

TableRock is Boise’s oldest brewpub, firing up the brew kettles in 1991. Dawson’s has been brewing coffee since 1995. Both businesses are locally owned and operated — not part of a chain. This is a local collaboration in every sense of the word — and a very cool idea.

“We completely reworked our (stout) recipe and the beer came out beautifully,” TableRock owner Mike Fitzgerald said. “(The beer) as an imperial stout character, followed by a hint of espresso.”

Dawson Taylor owner Dave Ledgard is really excited about Stimulator Stout, calling it a “very dark, bold stout with a smooth finish, with just a hint of espresso sneaking in.”

The coffee was added in the beer brewing process after it had been cooled to 200 degrees, Fitzgerald said, which ensures a better head retention on the stout.

TableRock will debut the Stimulator Stout at the brewpup (705 Fulton Street, Boise) on Sunday and the beer may show up in growlers at the Boise Co-Op some time in the future, Fitzgerald said.

That sounds worse than adding tomato juice, honestly.
