Beer can chicken with Old Chub

Cooking with beer — as in the use of beer as an ingredient in select dishes, not drinking some while you are cooking — is becoming more and more popular as chefs are embracing the wonderful flavors the barley malt/hops/yeast/water elixir can add to food.

And one of the funner recipes is beer can chicken, where you use a can of brew, inserted into the chicken, to provide flavor and moisture during the cooking of the bird.

The monkey in the wrench here, of course, is most beer in cans are mainstream brewer light lagers. They are undoubtably moist, but flavor-wise, they leave more than a little to be desired.

But check out this website from the Food Network for a nice recipe (complete with a helpful video) using Oskar Blue’s Old Chub Scottish Style Ale as the beer to flavor the chicken. Taste problem solved!

Dry chicken is a bummer, of course. One issue I have always had with the whole beer can chicken concept is that there are hardly any craft beers that come in a can.

Well, thank goodness for Lyons, Colorado-based Oskar Blues Brewery. Since they put their delicious craft brews in cans (I particularly enjoy Dale’s Pale Ale — a staple in the Orr fridge) the prospect of beer can chicken just sounds way more appetizing to me.

The folks at Oscar Blues didn’t even know Adam Gertler was going to use the Old Chub in his pilot “webisode,” which is part of the whole Next Food Network Star talent search. Nice. I can’t wait to try it.
